Nowadays consumers pay more attention to olive oil and its benefits. For this reason it is fundamental to be able to distinguish between premium quality olive oil and poor oil. Factors such as the variety and quality of olives, the cultivation and harvesting systems, the processing and preservation combine to produce high quality olive oil: the most valuable olive oils originate from selected olives, hand picked or mechanically reaped, processed at low temperature as soon as possible and stored in cool, dry and minimally lit places.
